The strong influence of Italian cuisine has made Istria well known for its homemade pasta varieties, such as fuži, pljukanci and ravioli. They are most often served with sauces made with local chicken, beef, truffles, shellfish, and asparagus. Seafood menus tempt with seasonal ingredients such as squid, scallops and sole, while meat dishes feature prosciutto and boškarin, beef from the Istrian ox. Vegetarians can enjoy seasonal vegetables like courgette and aubergine, and they will simply love the heavenly wild mushrooms.

When locals think of traditional Dalmatian cuisine, their first association is fresh fish served with Swiss chard. Grilled fish, stewed fish, boiled fish...
